(Potato Pancakes)

Crispy, golden Polish potato pancakes served with sour cream or applesauce.

Ingredients

  • 600 g starchy potatoes (peeled and grated)
  • 1 medium yellow onion (grated)
  • 2 whole eggs
  • 3 tbsp plain flour
  • 0.5 tsp salt
  • 0.25 tsp black pepper (ground)
  • 100 ml vegetable oil (for frying)

Instructions

  1. Place grated starchy potatoes and yellow onion in a clean kitchen towel and squeeze out excess moisture.
  2. In a bowl, mix starchy potatoes, yellow onion, eggs, plain flour, salt, and black pepper.
  3. Heat vegetable oil in a frying pan over medium-high heat.
  4. Spoon batter into the pan and flatten into pancakes. Fry until golden on both sides, about 3 minutes per side.
  5. Transfer to a paper towel-lined plate. Serve hot with sour cream or applesauce.
